Genelle, unless I’m imagining it, the graham crackers used to be bigger than they are now. I made a persimmon roll a month ago. I used one whole box and a few extra from another box. It also depends on the brand of crackers. I use a total of 36 graham crackers. The persimmon roll will be a little stickier if you don’t use as many cracker crumbs, but the taste will still be good.
