Delicious Homemade Chicken and Rice Soup can be made so easily! Don’t even think of using those canned soups! This is filled with flavor and so much better for you! It is definitely one of our family’s favorite comfort foods, especially when the cold weather begins to set in here in Kentucky.
This is another easy and delicious chicken dish with my chicken and broth recipe as a base. It’s amazing how many different dishes can be made from this simple base recipe.
Homemade Chicken and Rice Soup
Make one recipe of chicken and broth and return the strained broth to the stock pot, setting the chicken pieces aside for later. ( I use the baby carrots and just cut each into two or three pieces. Typically, we have medium-grain rice but you can also use long-grain rice.)
To this add:
- 1 medium onion chopped finely
- 1 cup cut carrots
- 2/3 cup white rice
- 2 chicken bouillon cubes
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper
- 1/4 teaspoon ground cumin
Heat the mixture to boiling, reduce heat to low, cover, and simmer for 20 minutes. Add chicken pieces, stir, and simmer for 10 more minutes. Serve hot. My family likes a little extra heat, so we sprinkle a little cayenne pepper onto each bowl of soup.
Sometimes, we have leftovers of this soup and we usually add some more chicken broth when heating the leftover soup. The rice absorbs a lot of the broth overnight. It’s not absolutely necessary but we like it a little more on the soupy side.
Our family likes my homemade rolls with this soup, which you can see in the picture above, but you could also serve French bread or saltine crackers. On a cold winter day, this soup hits the spot! Delicious Homemade Chicken and Rice Soup – it’s the best!
