The Search For A Delicious Potato Soup
That began my search for the best recipe. You see, up to that point I had only had a version my mother had made. (Sorry, Mom!) It was bland and consisted of cubes of potato cooked in water and then milk was added. Seasoning with salt was kept to a minimum because my dad had juvenile diabetes. I don’t even remember onions being added and I know there were no carrots. My mother made some good dishes. Potato soup was not one of them.
The soup at the cafe was thick, rich, and creamy, loaded with large potato cubes, carrots, celery, and onions. The seasoning is perfect. This soup is nothing at all like the one we were served at home. It’s amazing that potato soup tastes so good.
I began scouring my cookbooks and the cookbooks at the library. Looking up recipes on a computer was not an option back then. We are so lucky today! I searched through magazines and finally found what I believe is one of the best potato soup recipes ever.
Big chunks of potatoes, carrots, and celery are abundant in the soup. I always leave the skins on the Yukon gold potatoes and any baby red potatoes because it adds a rustic look to the soup. You soften the onions in butter. Add flour, salt, and pepper to the onions and butter to create a roux. Add the liquids and the result is a thick creamy soup.

Fall Is A Perfect Time For This Potato Soup
This past week, here in Kentucky, we have seen evening temperatures dip down into the fifties and fall is definitely in the air again. Dave suggested I make this soup this week. Isn’t it funny how we start thinking of soups and stews as September creeps upon us?
This soup recipe has been a family favorite since the first day I made it all those years ago. My children have a completely different concept of potato soup because of a little cafe, which is no longer there, and this recipe for homemade potato soup!
Best Potato Soup Ever
Ingredients
- 6 medium potatoes, peeled and cut into bite-sized cubes
- 1 cup of baby carrots, cut in half
- 3 celery stalks, sliced thin
- 2 quarts water
- 1 onion, chopped
- 6 tablespoons butter
- 6 Tablespoons All-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1-1/2 cups milk
- 1 cup chicken broth (homemade or a box of organic)
Instructions
Place potatoes, carrots, and celery in a soup pot with the two quarts of water and bring to a boil. Turn down to a simmer and cook until tender for about twenty minutes. Strain vegetables, and set them aside. Reserve the liquid from the vegetables. **
Saute the chopped onion in butter until soft. Stir in the flour, salt, and pepper. Slowly add the milk, stirring constantly until the mixture is thickened.
Add cooked vegetables and stir gently. Add 1 cup of chicken broth and the reserved liquid from the vegetables until the soup is the consistency you desire. This makes enough for 8 to 10 big bowls of soup. Garnish with fried and chopped bacon bits and freshly chopped green onion or chives.
**If you prefer, you can omit the chicken broth and just use the reserved liquid from the vegetables. It is delicious that way, too.
