Need an awesome brownie sundae mini dessert? You won’t believe how easy these are and aren’t they adorable? A friend of mine shared a video on Facebook last week. Along with some other chocolate desserts, how to make these chocolate cups was in that video. I knew the kids would enjoy these and I couldn’t wait to make them.
Instead of filling ice-cube trays with chocolate, you make ice cubes and dip them in melted chocolate! The chocolate sticks to the ice-cube, the ice-cube melts a little, and releases! You end up with a square chocolate cup! Brilliant! Who thought this up?
Make The Chocolate Cups
You will need a silicone 2″ square ice-cube tray and you will also need 1 cheap wooden chopstick for every 2 ice-cubes. Our tray makes 6 ice cubes. 3 chopsticks were used. Fill the ice-cube tray with water. Keep the water level uniform so all the cubes will be the same size.
Break the cheap wooden chopsticks in half and place one in each 2″ well of the tray. You could use a heavier wooden skewer in place of the chopsticks if you have some of those.
Popsicle sticks would work, too.
Now, place the ice cube tray in the freezer and freeze solid. It is easier to transport the wobbly tray to the freezer on a cutting board or platter. I just put the ice-cube tray and cutting board in there together. Yep, I’m speaking from experience and Kool-aid is much messier and stickier.
When the ice-cubes are frozen, melt some chocolate chips in a glass bowl. You want them melted but not too hot.
Remove the cubes from the tray with the chopstick handles, one at a time, and dip into the melted chocolate. Submerge close to the top edge of the cube but not over the top. (You won’t be able to slip the ice-cube out if the chocolate is over the top of the cube!)
Set the chocolate covered ice-cube on a piece of parchment to flatten the chocolate so it will sit straight. In the video I watched, the chocolate bowl slipped right off of the ice-cube. Well, that did not happen with these.
I was afraid they would fill with water from the melting ice cube. So, I turned them upside down on a paper towel to allow the cube to melt a little and drain. It took a couple of minutes but voilà! It slipped off effortlessly and I had a chocolate box!
I did have a bloop where I left the ice cube in the chocolate for too long and the chocolate slipped off the cube. It just looked like a square indentation in the bowl of chocolate. Warning here! There were a couple of drops of melted ice! Water and melted chocolate stirred together will cause the chocolate to seize up and that makes a gritty mess. I quickly put the edge of a paper towel in the indentation and soaked up all the water before stirring it again!
Now, you can fill the little chocolate boxes with brownies, ice cream, nuts, whipped cream, and a cherry on top or your favorite fillings!
Make brownies in a 9″ x 13″ pan so they are a thinner brownie. To make it easy to remove the brownies from the pan, line it with Quick Release Reynolds Wrap. Use the wrap ends to lift the brownies out of the pan and it will be easy to cut them neatly, too. (You can make homemade brownies or use a brownie mix for this.) Cut the brownies into squares to fit inside the cubes.
Assemble The Brownie Sundae Mini Dessert
Place the cut brownie squares in the bottom of the chocolate boxes.
Add a scoop of ice cream, (We chose chocolate chip.)
some chopped nuts,
a dollop of whipped cream,
and a cherry on top!
