Mermaid Party Foods to Serve

‘Crabwiches’
The Toothpick Eyes
You will want to prepare the ‘eyes’ in advance. For this project, you need 12 mm googly eyes, L’Elegance wooden toothpicks, and Tacky Glue, hot glue, or low melt glue. I used Tacky Glue for these. The L’Elegance wooden toothpicks are pointed on one end and the other end is grooved with a flat end. It’s easier to glue to these. You might be able to find these at your local market.
Lay the toothpicks out on a flat surface. One at a time, pick up a toothpick and place a dot of glue on the end. Place a googly eye on a flat surface, googly eye down, and lay the toothpick end with the glue on top of the flat backside of the googly eye. Leave the toothpick eyes to dry thoroughly.
Making The Crabwiches
These sandwiches are made with ham, cocktail croissants, leaf lettuce, Colby Jack cheese slices, and cream cheese-based spread below from Tea Time Magazine. These are as tasty as they are simple to make and perfect with ham. We found the cocktail croissants at Sam’s Club. Twenty came in a plastic bakery container.
First, make the pineapple and Cucumber spread. The kids love the addition of this spread to the sandwiches.
Pineapple and Cucumber Spread

- 8-ounce block Cream Cheese – softened
- 1 Tblsp. heavy cream
- 1/4 cup cucumber
- 1/3 cup crushed pineapple – drained
- 1 Tblsp. chopped fresh chives
- 1/4 tsp. ground black pepper
Place the cream cheese in a medium bowl, add the heavy cream, and beat at high speed with a mixer. Add the cucumber, pineapple, chives, and pepper. Combine well. Set aside.
Constructing The Crabwiches
First, with a serrated knife, slice an opening in the side of
the croissant but don’t cut completely through the other side.
Liberally, spread the pineapple and cucumber spread on the inside of the croissant.
Next, tuck a small piece of leaf lettuce on top of the spread into the sliced opening.
Then, flat roll a piece of ham and place a piece of Colby Jack cheese in the last fold.
Tuck the ham and cheese roll into the sliced opening on top of the leaf lettuce.
Strategically, place the toothpick eyes on the top of the croissant and push through the ham roll slightly into the bottom half of the croissant.
Serving The Crabwiches
Serve these on a platter or platters, and tuck fresh parsley around the crabwiches. I used two rectangular white platters to serve these.
