Who doesn’t love a good coffee cake? In America, coffee cake generally refers to a sweet cake, often flavored with cinnamon and walnuts, intended to be eaten with coffee or tea. You’ve probably had a coffee cake made with yeast but I prefer the cake type made using baking soda, and, or, baking powder. It’s a little denser than a typical sponge cake.

Walnut Coffee Cake
Serves 16
- 1 cup butter – softened
- 2 cups sugar
- 2 eggs
- 1/2 cup milk
- 1-1/2 cup flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sour cream
- 1 teaspoon vanilla extract
Filling
- 1 cup chopped walnuts
- 2 Tablespoons sugar
- 1/2 teaspoon ground cinnamon
Glaze
- 3/4 cup powdered sugar – sifted
- 1 Tablespoon butter – melted
- 1 Tablespoon milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Preheat the oven to 350°.
Prepare the Cake Batter for the Walnut Coffee Cake
Cream the butter and sugar until light and fluffy in a large bowl.
Add the eggs and the milk. Beat until smooth.
Sift together the flour, baking powder, and salt into a medium-sized bowl. Sifting helps to combine everything evenly before mixing it into the wet ingredients.
Gradually add the dry ingredients to the butter, sugar, eggs, and milk mixture. Beat until well blended. Don’t overbeat after adding the flour.
Next, add the sour cream and vanilla and mix well.
Spoon half of the batter into a greased and floured 10-inch tube pan. (I usually line the bottom of any cake pans with parchment paper to be on the safe side. I didn’t this time. Line the bottom of the pan with parchment! Don’t tell anyone, but I had to flip the coffee cake right side up because the cake stuck to the bottom even though I greased and floured the thing!!! Err on the side of caution!)
Set the pan aside and prepare the filling.
Prepare the Filling for the Walnut Coffee Cake
Mix the walnuts, sugar, and cinnamon in a small bowl.
Spoon the walnut, sugar, cinnamon mixture over the batter in the pan.
Then, spoon the rest of the batter and smooth over the top of the filling.
Swirl with a knife.
Bake 1 hour to 1 hour and 10 minutes. Use a toothpick to check for doneness. Don’t overbake! That is what leads to dry cakes!
Cool 10 minutes in the pan. Then, remove the cake and allow it to cool on a wire rack.
While the cake is baking, toast the 1/2 cup of walnuts for topping. I just put the chopped walnuts in a small skillet and heat them on medium for 5 minutes or less. Don’t walk away. Just move them around in the skillet until lightly toasted and then, remove them to a bowl. If you leave them in the hot skillet, they might burn!
Prepare the Glaze for the Walnut Coffee Cake
Melt the tablespoon of butter in a small pan. Stir the powdered sugar and the butter together.
Then, add the milk and vanilla. Stir until the mixture is smooth.
Lastly, drizzle the glaze over the cake and sprinkle the remaining toasted walnuts over the glaze.
