Not long ago, Dave came home from a fishing trip. He told me about these lemon bars that his friend’s wife had made. He said they were really good. I’m always open to trying new recipes, so of course, my response is, “Did you get the recipe?”
Last year, I shared a recipe for Lemon Cheesecake Bars, but these sounded quite different. Well, it took him a while to ask for it, but he finally did. So, he read off the ingredients and the directions. I wrote them down and then, began transferring the recipe to this post. The ingredients are a yellow cake mix, eggs, cream cheese, butter, and powdered sugar.

Easy Tangy Lemon Cheesecake Bars
Well, I have it in my head that I am making lemon bars and instead of a yellow cake mix, we are using a lemon cake mix! So, here is my rendition of Easy Lemon Bars. It begins with a lemon cake mix and it only takes 5 ingredients!
Make a note here. Four cups of powdered sugar just seemed like too much to me! I only used three and think the bars are very good and plenty sweet. Dave agrees. If you like, add the fourth cup of powdered sugar.
Easy Lemon Bars Recipe
Preheat oven to 300°
Ingredients For Easy Lemon Bars
- 1 box yellow lemon cake mix
- 3 eggs
- 8-ounce bar of cream cheese
- 1/2 cup butter – melted
- 3 cups powdered sugar (You can use 4 if you like!)
Prepare The Pan While the Oven Preheats
Prepare a 9-inch x 13-inch sheet pan. To make removing these from the pan super easy, cut a piece of parchment paper or non-stick Reynold’s Wrap to cover the bottom from end to end, the sides, and also add about an inch for overhang. Then, cut another piece to fit from side to side, covering the bottom, sides, and add about an inch for overhang. Removal of the bars is so easy using this technique!
Directions For Easy Lemon Bars
Mix the lemon cake mix, the melted butter, and 1 egg together. As stirring becomes more difficult, use the back of the spoon to press the cake mix into the batter.
Press into the bottom of the pan. I used an offset knife and ultimately, my fingers to press the last bit of batter into the pan.
Then, beat the cream cheese until smooth.
Mix the powdered sugar, the cream cheese, and the remaining two eggs until smooth.
Pour over and spread on top of the lemon crust.
Bake at 300° for 40 minutes until the top edges are golden brown. The top does not need to be brown. Remember the bars will continue to bake for a couple of minutes. Don’t overbake!
Allow the bars to cool. Then, cover with foil and refrigerate for at least three hours. Slice, and serve. Sprinkle powdered sugar over the bars if you like. These go great with fresh blueberries! Makes 24 bars.
