Who wouldn’t enjoy an easy-to-make peach melba mini dessert? These are a tiny treat, yet they have a big impact! If you love the flavor of peach and raspberries, you will enjoy this dessert. These are just the right size for sampling. Don’t you just love mini desserts?

Peach Melba Mini Desserts
Makes 6 (6-ounce) mini desserts
Ingredients:
- 1 (3-ounce) package JELL-O Peach Gelatin
- 1 cup boiling water
- 1/3 cup cold water
- 1 cup vanilla ice cream
- 6-ounces fresh raspberries
- Polaner All Fruit Raspberry spread
- canned peach halves sliced thinly
Directions:
Pour the gelatin into boiling water and stir to dissolve. Then, stir in the cold water.
Measure 3/4 cup of the gelatin water mixture. Blend in the ice cream and chill until slightly thickened.
Put the remaining clear gelatin to the side. Don’t refrigerate yet.
Place a few raspberries in the mini dessert glasses. (These raspberries are huge! I only used a couple in each of the glasses.) Spoon a little of the raspberry spread over the raspberries.
Retrieve the slightly thickened gelatin-ice cream mixture. Divide the mixture equally among the six mini dessert dishes. (I use a small gravy ladle for this.) Refrigerate the desserts until the mixture is set. (It is more like a pudding consistency and won’t set firmly.) This takes about 30 minutes.
Preparing The Peaches
While the gelatin-ice cream mixture firms up a little in the fridge, remove the peach halves from the can. Lay the peach half, cut side down, on a cutting board. Slice thinly from top to bottom.
Remove the little desserts from the fridge. Begin laying the peach slices lightly on top of the gelatin-ice cream to resemble a rose.
Chill the gelatin set aside earlier for a few minutes just until slightly thickened. Then, spoon the clear gelatin on top of the peach roses. Chill until set. You don’t want the gelatin to get too firm. It should still be able to pour.
This dessert is little but it is really tasty, light, and refreshing, perfect for a summer day!
