These mini berry parfaits are so beautiful, easy, light, tasty, and refreshing! If you look closely, you can see layers of creamy pink. The grandkids couldn’t wait to dig into these pretty little berry desserts.
For this dessert, you only need three ingredients plus berries for garnish! I’ve used cranberry-pomegranate juice, but you can use a different flavor. I think it would be fun to try other flavors and fruits. The kids liked these so much, they’re sure to like them in a different flavor.
Mini Berry Parfaits
Berry Parfaits Ingredients:
- 1 – (3-ounce) pkg. strawberry JELL-O
- 3/4 cup boiling water
- 1/2 cup cold cranberry – pomegranate juice
- Ice cubes
- 1/2 cup heavy cream – freshly whipped to stiff peaks
- Berries and mint leaves for garnish
Directions:
Dissolve the gelatin in boiling water.
Pour the gelatin liquid into a blender container.
Add enough ice cubes to the cranberry-pomegranate juice to measure 1-1/4 cups.
Add the ice and juice to the blender container. Stir until the ice cubes are partially melted.
Cover and blend at high speed for 10 seconds.
Add the whipped topping, cover, and blend for 15 seconds.
Pour half of the gelatin mixture into 6 mini dessert glasses. Let stand for a minute.
Top with the remaining gelatin mixture. Chill for 1 hour until set. Garnish with berries and mint leaves.
