You will seriously quit buying brownie mixes! This recipe is so easy and it beats the box mix by leaps and bounds! This has been my go-to recipe for brownies for years. The brownie is so fudgy rich and the simple chocolate fudge frosting is the perfect topper.
This is one of those recipes you can make before you go to work in the morning, quickly and easily. Can it get any better than that? The ingredients are always in my cupboard for emergencies. I am a chocoholic, if you are, too, you understand.
1/2 cup butter
2 ounces unsweetened chocolate squares
1 cup granulated sugar
1 teaspoon vanilla
2/3 cup all-purpose flour
*Grease an 8″x 8″x 2″ square baking pan and set aside. In a medium saucepan, melt the butter and chocolate over low heat. Stir in sugar, eggs and vanilla. Using a spoon, beat lightly by hand just until combined. Stir in flour.
Pour into prepared pan. Bake in a 350° oven for 25 minutes.
In a saucepan, cook and stir 3 tablespoons of butter, 2 tablespoons of unsweetened cocoa powder and 2 tablespoons milk, until it comes to a boil. Remove from heat and stir in 1- 1/2 cups of powdered sugar and 1/2 teaspoon of vanilla. Spread on warm brownies, let cool (if you can wait!) and serve.
* Tip – I use Quick Release Reynold’s Wrap to line my square pan. After the brownies cool, just lift from the pan, fold down the foil, cut and no struggling to get them out of the pan – perfect squares!
