Oatmeal Raisin Cookies
Ingredients:
3 large eggs 1 cup raisins 1 teaspoon vanilla extract 16 Tablespoons unsalted butter, at room temperature 1 cup packed brown sugar 1 cup granulated sugar 2 – 1/2 cups flour 2 teaspoons baking soda 1 teaspoon cinnamon 1 teaspoon salt 2 cups old-fashioned oatmeal
Directions:
Whisk the eggs and vanilla in a small bowl. Stir in the raisins, cover, and let soak for at least one hour.Preheat the oven to 350°
Cream the softened butter, white sugar, and brown sugar together with a spoon, making sure there are no lumps of brown sugar. Mix the flour, baking soda, cinnamon, and salt in a separate bowl. Then, add to the butter-sugar mixture and mix well.At this point, you are wondering about this process and if it will work… I did, too, but it will all come together and make a nice dough. Keep going!
Next, mix in the raisin, egg, and vanilla mixture. Just use a wooden spoon to pull the dough up and press it down as you turn the bowl. Then, mix in the oatmeal using the same process. With a 1-1/2 inch ice-cream scoop, drop dough onto a cookie sheet and bake in a 350° oven for 8 – 11 minutes until the cookies are just beginning to brown. The cookies are perfect at 11 minutes in my oven. Remove from the oven and let rest on the hot cookie sheet for a couple of minutes. They will continue to bake. Don’t leave them in the oven too long!
