An instant read thermometer is a good thing to have for this recipe. The water needs to be at the right temperature for the yeast. There’s no guessing with an instant read thermometer. Another tool I really use a lot it the dough pastry scraper. ◄ This scraper is all metal like mine and I love it.
Oatmeal Dinner Rolls
Ingredients:
- 2 cups Water
- 1 cup quick-cooking Oats
- 3 Tablespoons Butter
- 5 teaspoons Active Dry Yeast (2 packets)
- 1/2 cup warm Water – (100 – 110°)
- 1 Tablespoon Sugar
- 4 cups all-purpose Flour
- 1 – 1/2 teaspoons Salt
- 1/3 cup packed Brown Sugar
Directions:
In a medium saucepan, bring 2 cups of water to a boil. Stir in the quick-cooking oats and butter. Boil for 1 minute. Remove from the heat and cool to 110°.
In a 2-cup measuring cup, stir the yeast and sugar into 1/2 cup warm water. Let stand for 5-minutes.
Beat the oat mixture, yeast mixture, flour, salt, and brown sugar at medium speed on an electric mixer until smooth.
Turn dough out onto a smooth lightly floured surface. Knead until smooth and elastic.
Place in a greased bowl. Turn the dough over to grease the top, too.
Cover and let rise in a warm place, about 85°, for 1-hour or until the dough has doubled in size. (It is a beautiful hot day here today, perfect for helping this dough rise.)
Shaping the Oatmeal Dinner Rolls
Punch down the dough and cut in half. Cut each half of the dough into 4 equal pieces. Then, cut each of those into 4 more equal pieces. You should have 16 equal portions from each half. Then, shape into balls. It’s easy to gently roll this dough into balls in the palms of your hands.
Lightly-grease two 9-inch cake pans. (Cooking spray makes it easy!) Place 16 of the balls in each of the cake pans.
Cover and let rise in a warm place, free of drafts, for 30 minutes or until the dough has doubled in size.
Bake at 375° for 15 minutes or until golden brown. For a special treat, serve with honey butter. It’s easy to make! The recipe is right below.

- 1 stick of butter (8 Tablespoons)
- 1/4 cup honey
Stir the stick of butter until it’s creamy. Add 1/4 cup of honey and blend completely.
