If you’ve never had spaghetti squash au gratin, you need to try this recipe! Dave was hesitant to try this dish; he was skeptical. However, he had a healthy helping for dinner and more of the leftovers the next night, too. He admitted it was pretty tasty.
While we were vacationing at the beach, our granddaughter Sophie stopped by the house and left two spaghetti squashes on our kitchen counter. She had visited her other grandmother and Charles. Charles has a garden and told her to share these with us.
Although Dave and I grew up in the country and had gardens, this is one gourd we have never grown. I searched for a recipe and found one on Allrecipes. This is my version of that recipe. I don’t use fat-free products, and we use real butter.
Spaghetti Squash Au Gratin
Makes 6 Servings
Ingredients:
- 1 Spaghetti Squash
- Olive oil
- 3 Tablespoons Butter
- 1 small Yellow Onion
- 1/2 teaspoon Red Pepper Flakes
- 1/4 teaspoon Garlic Powder
- 3/4 cup Sour Cream
- 1 cup freshly Shredded Cheddar Cheese
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon freshly Ground Black Pepper
Directions:
Preheat the oven to 400°F.
Cut the ends off the spaghetti squash. Set the squash on its end and cut it in half down the center. Remove the seeds and stringy guts inside the squash with a spoon.
Line a sheet pan with Non-Stick Reynolds Wrap. Drizzle olive oil over the foil. Then set the squash halves in the oil, cut side down, and rub around in the oil.
Bake at 400° for 1 hour. You should be able to pierce the gourd skin with a fork when it is done. Remove from the oven and allow the gourd to rest while you prepare the onion mixture.
Turn the oven down to 375°F.
Heat the butter in a medium-size skillet over medium heat. Thinly slice the onion. Add to the melted butter. Sprinkle the pepper flakes, garlic powder, salt, and freshly ground pepper over the onions. Cook the onion mixture until the onion is lightly browned.

Spray a 6-cup casserole baking dish with non-stick cooking spray.
Scrape the spaghetti strands from the baked squash halves.
Mix the squash, onion mixture, sour cream, and 1/2 cup of the cheddar cheese. (Reserve the remaining half for topping the mixture.)
Once the mixture is combined, transfer it to the prepared casserole dish. Top with the remaining shredded cheese.
Bake in a 375° oven for 25 minutes.
Turn on the broiler and broil for a couple of minutes to brown the top.
