Shadow Steak Burrito – Marinade for Shadow Steak

Homemade Grilled Shadow Steak Burritos

This simple marinade and high-heat grilling make a tender, juicy shadow steak perfect for a flavor-packed burrito.

We bought and shared a beef steer from a local farmer with our youngest son and had it processed. There were several shadow steaks, which are thin and should be cooked quickly over high heat.

Dave decided we should have steak tacos.  I stirred up this marinade and marinated the meat for an hour.  Then, Dave grilled it.  Well, we didn’t have soft taco shells.  We had tortilla shells.  So we had burritos.

Since then, Dave has requested these 3 times in the last couple of months.  Let’s just say he really likes them.

While the steak marinates, prepare the toppings and condiments.  We cut lettuce, tomatoes, red onion, and I grated fresh cheddar cheese.  We served sour cream in a small bowl.  We also added Hot Old El Paso Taco Sauce and La Costeña Green Salsa.

Preheat the Grill

Heat the grill to high heat 450°-550°

Shadow steak cooks like flank or skirt.  Grill 2-3 minutes per side for medium-rare.  Avoid overcooking!  You don’t want it to be tough.

Remove it from the heat, place a pat of butter on top, cover with tin foil, and let it to rest for about 5 minutes.

Warm the tortilla shells on the grill for a few seconds.

Cut the beef into bite-sized pieces and serve immediately.
